  5. Add the rice and mango, heat through, add the mint and blitz with a hand blender. (reserve a bit of chopped mango)
  6. Taste and season with sdalt pepper and lemon juice.
  7. Pop into warm bowls and garnish with some of the reserved mango, chicken and pepper and a drizzle of oil.
