Remove the chicken and mushrooms from the pan and set aside. Remove from the heat and set aside with the chicken and mushrooms. Melt the butter in a saucepan, stir in the flour and cook for about three minutes, stirring constantly until it has formed a thick smooth paste (this is called a roux). The thighs of a chicken are my favourite cut.

- Fry chicken pieces until coloured, add salt, pepper and garlic granules and mix well. Remove chicken put into a greased crock pot with lid..
- Use frying pan to melt butter and add chopped onions. Saute onions until opaque in colour. Then add cut mushrooms, fry for 3 minutes stirring. Add Black Pepper and Sweet peppers mix well then transfer to crock pot with chicken stir to mix.
- Stir mix well bring to the boil reduce heat to simmer for 1 to 1 1/2 hours stirring occasionally.
- Add lemon, stock, water, can of chicken and mushroom soup mix. At the end stir in corn flour mixed in a small amount of water and stir in to thicken. If you want it thicker just add another heaped teaspoon of corn flour to a small amount of water.
- Serve with boiled new potatoes or potato wedges. If you like it not thickened, you can have crusty cobs to dip in.
