Lemon Rosemary Chicken ~ Chicken thighs rubbed and marinated with lemon, rosemary, garlic, then seared in skillet and finished in oven. Fresh rosemary, lemon juice, and garlic are three simple yet flavourful ingredients that create these beautiful and delicious Rosemary Lemon Roasted Chicken Breasts. I thought the flavors of lemon and rosemary would fit the bill, so I threw together this marinade. This chicken was such a hit that even the kids ate multiple pieces.
Instructions to make Rosemary Lemon Chicken:
- Preheat oven to 350°F
- SEASON CHICKEN WITH SALT,PEPPER AND GARLIC POWDER
- Place chicken pieces in a cooking dish
- Pour 1/2 cup of chicken stock in cooking dish
- Cut 1 lemon in half set the other aside for later. Use the other half and cut 4 slices in half and place on each piece of chicken.
- Gently pull apart some Rosemary sprigs and spread some on all pieces of chicken.
- Put 2 tablespoons of butter and place the cooking dish in the oven covered for a half hour, then uncover the chicken and leave in the oven for another 35-45 min. Pour the chicken stock out and put aside
- Once you've taken the chicken out pour a little of the stock over the chicken and set on serving plate.
I had some hot dogs left over that night. Rub the remaining butter on the outside of the chicken. Stuff the lemon inside the cavity. Using tongs, turn chicken thighs skin side up. Juicy, tender whole roasted chicken seasoned with lemon and rosemary, always a winner in my house!
